TICKET #400

Spring launch · Service log: 400 plates · 4 loads · 5:42 PM to 9:17 PM
The mechanism
HUMIDITY
Measured and held.
Humidity is measured in the cabinet and held, not just injected, so skin browns the same on load 4 as on load 1.
CORE PROBE
The probe ends the stage.
A 6-point probe reads the coldest point and ends the stage on it, not on the clock. A crowded pan or a slammed door doesn't change the result.
FAN
The fan reverses.
The auto-reversing fan cooks the back of level 10 like the front of level 1.
PROGRAM
The program is locked.
Programs are locked by PIN, so nobody adjusts it a little at 9 PM.
Core temperature at pull, across all 10 levels and across 4 consecutive full loads.
Sample test, Ridgeway test kitchen: 480 chicken supremes, 4 loads of 120, same locked program, three different operators. Illustrative figure for this sample campaign.

Why it matters
Your best cook writes the program once. Anyone on shift runs it.
Every kitchen has one cook who can hold a roast right from the first ticket to the last on a 400-cover Saturday. Locked programs, picture buttons and probe-ended stages mean that standard doesn't depend on who's working the oven tonight. It frees your best cook to run the pass.
Typical training to run locked programs: one shift with your dealer's demo chef (sample figure).
